Prosecco Toffoli
The Toffoli vineyards are located in Refrontolo at 200 meters above sea level in the heart of the DOCG Conegliano Valdobbiadene and Colli di Conegliano region, an ideal area for vine cultivation. The vineyards extend over 25 hectares (of which 20 are rented) and are cultivated with Glera, Verdiso and Marzemino grapes.


Story
Vincenzo and Maria Toffoli got married in the ’50’s. After marriage they, due to the economic crisis, emigrated to Great Britain where they stayed 12 years and Vicenzo worked as a farmer and gardener.
When they returned to Italy, they bought 5 ha of vineyards in Refrontolo, the hometown of Maria and a prime location of the Conegliano Valdobbiadene zone. Vicenzo could finally realize his dream of making his own wines.


Sante, Gabriele and Luciano are the ones who are responsible for the wine production and sales worldwide, while the younger generation. Umberto and Fransesca are managing the paper work and various other tasks. Toffoli is a family-run business, where multiple generations work together.
The philosophy of the family is to produce quality wines, and their extensive vinification knowledge coming from years and years of experience results in knowing exactly how to organise and manipulate the wine-making processes.
The Toffoli’s are proud of the sustainable way they make their wines. One of the tools thing to ensure quality is picking the grapes by hand. Manual harvesting is a gentler process than mechanical harvesting, but much more time consuming and labor intensive.


Prosecco
Prosecco is a sparkling wine made from Glera grapes. This wine is fresh and fruity and has a very good acidity. The bubbles are always refreshing and not aggressive.
Proseccos are labelled brut, extra dry, dry or demi-sec, depending on the sugar content:
brut less than 12g/liter
extra dry between 12-17g/liter
dry between 17-32g/liter
demi-sec between 32-50g/liter
Prosecco is produced using the Martinotti method, in which the second fermentation takes place in closed, stainless steel pressure tanks. During this process the bubbles are formed.
DOCG Status
Prosecco is produced in 9 provinces across the Veneto and Friuli Venezia Giulia regions. The wine can be designated as either a DOC (denomination of controlled origin) or DOCG (denomination of controlled and guaranteed origin).
There are two areas where Prosecco Superiore is produced: Coneglio Valdobbiadene and Asolo. These two areas were promoted to DOCG status.

The Toffoli family looks after their grapevines with care and dedication, with love for their land and respect for the terroir and traditions, always in search of excellence.
In recent years the Toffoli wines have won various prestigious awards.



Conegliano Valdobbiadene
The area of the Conegliano Valdobbiadene lies in the Veneto wine region of north-eastern Italy, a prestigious wine zone were the Prosecco produced is considered “superiore”.
From 2009 the Conegliano Valdobbiadene Prosecco Superiore has the DOCG-status, the highest level of quality for Italian wines.
There is also the Prosecco DOC with less restrictive regulations, covering large areas of both Veneto and Friuli Venezia.
